Not sure what are all the pizza craves recently, we might as well follow what's trending in Montreal at the moment. After blogging about Pizzeria GEMA, I stick on the same theme for this post. This time, it is at Brigade Pizzeria Napolitaine located on Stanley, just in front of the Deville Dinerbar.

Their concept is a first in Montreal. It's like going to Subway, but you customize your own pizza. You first choose a pizza base then for each additional vegetarian/cheese topping costs $1 and meat, $1.50. Once prepared, it is cooked in a wood fire oven at a temperature of over 900F (400F hotter than your home oven). Within 2 minutes, it is hot and ready to be eaten.

If decisions are too much of a fuss for you, you can opt for their signature pizzas. We ordered 3 pizzas - the classic margherita, fungi and prosciutto&ricula. Let's start off with the crust. It is soft, thin and lightly crisp. It is under seasoned to balance off the salty toppings. The texture and flavour of the crust is noticeably different from the one at GEMA.

The margherita pizza contains a simple san Marzano tomato sauce, mozzarella, parmesan, basil and olive oil. Simple and delicious. Fyi, san Marzano is the best choice of tomato to use for sauce because it is sweet and less acidic. The funghi has a white pizza base topped with cremini mushrooms. When I think of a mushroom pizza, I would be expecting a variety of 2-3 mushrooms instead of using one kind. It feels the mushrooms were watery, not much flavour. Finally, the prosciutto-arugula pizza tastes good when eating the toppings altogether - zesty and fresh from the arugula, salty from the prosciutto.

Overall, we were quite satisfied with our experience. It is noticeably different from my experience at GEMA. The assembly line is relatively quick and efficient. Definitely coming back to try out their other pizzas.
