Ottawa - Nouvelle cuisine is a term that defines the type of food serves in a fine dining restaurant. The dishes are beautifully plated where each ingredient shine on its own, yet melds well with the other ingredients. Chefs use local produces as their source of inspiration to concoct their menu and the preparation time is kept to a minimum. The ingredients are rarely smothered in heavy sauce instead they are seasoned with butter, herbs, spices and acidity to bring everything together. This defines the food served at Fauna, one of the Ottawa's newest restaurants on Bank St. 

The pickerel is probably the most attractive item in their menu. The fish has a mild sweet taste complemented with thinly shaved pickled carrots and daikon, nutty lentil hummus and crisp fingerling potatoes. The garnishes are arranged nicely on the edge of the plate. 

I ended the meal with an elevated version of the British classic - sticky toffee. The cake is moist contrasts well with the smooth caramel ice cream, tart apple compote and salty pistachos. One critique is the pumpkin seeds with their skins on were quite unpleasant to eat and do not contribute much to the dessert. 

Overall, great food, impeccable service, definitely going back for a second visit.
